Hash browns baked with cream of chicken soup, sour cream and cheese is a popular potluck casserole. You can’t go wrong with this recipe!  Baked in an hour and a crowd favorite! This is an easy last-minute dish that can be thrown together quickly and will quickly become a favorite comfort food! Enjoy this Cheesy Hash Browns recipe!

Cheesy Hash Browns Recipe!

This is an easy versatile recipe with simple ingredients. Sometimes I like to add leftover bacon and a package of hidden valley ranch mix to my recipe but this time I made it the easy way. All you need is a 28oz  bag of hash browns, sour cream, butter, cheddar cheese, and cream of chicken or mushroom. Adding a crust on top is optional when we do I use a sleeve of Ritz crackers and a half of cup of butter.

Make sure your butter is room temperature and soft! Mix together your butter, sour cream, and cream of chicken or mushroom. Add in the cheese, I prefer sharp cheddar. Next, mix in your semi-unfrozen hash browns.  Pour into a 9×13-inch pan and get ready to make the topping.

Take your sleeve of Ritz crackers and put them into a ziplock bag. Pound them into a crumbly mixture.  Pour them into a bowl with melted butter. Mix them together and sprinkle on top of hash brown mixture

Place the pan in a preheated 350-degree oven for 1 hour and get ready to fall in love with this creamy cheesy potato dish!

Ok……My mouth is watering…This is going to have to be made again tonight! Remember anything you make can be tailored to YOUR taste buds. I love to mix and match when cooking, so do not be afraid to add things to this!

  • 28 oz bag Hash browns
  • 1 pint Sour Cream
  • 1/2 Cup Butter
  • 1 can Cream of Chicken
  • Optional Topping
  • 1/2 Cup Butter
  • 1 Sleeve Ritz Crackers


  1. Preheat oven to 350 degrees
  2. Mix together butter, sour cream, and cream of chicken into big bowl
  3. Add in cheese and hash browns into cream mixture
  4. Pour into 9x13 pan
  5. If you would like to add a crust on top mix together crumbles crackers and butter and sprinkle on top of hash brown mixture
  6. Bake for 1 hour until hash browns are tender
  7. ENJOY!!
